Château le Payral Logbook #5: Vintage 2025, a Year of Hope and Authenticity!

The 2025 harvest is now complete at the estate since October 16. It began at full speed on August 25, lasting nearly two months in total.

A early start and challenges successfully met

The harvest began at the end of August. For the natural sparkling wines, all indicators were green to start picking in the second half of August. Holidays were therefore cut short (only four days!), and we returned to harvest this first batch in search of freshness and aromatics. On August 25, we brought in the Ugni Blancs and a lot of Muscadelle. Then, from the 27th onward, we continued with the Sauvignon Gris for our sulfite-free cuvée, Lou Payral, reaching 12.5° with still-present acidity for perfect balance. The same was true for the Sauvignon Blanc of the traditional cuvée, which was already reaching nearly 13°.

The richness of our plots at work for generous reds

At the end of August and early September, we harvested the rosés, then the first Merlots in mid-September, with lots reaching up to 14.5°. The diversity of concentration illustrates all the richness of our mosaic of plots and grape varieties. The art of blending takes on its full meaning here: each lot, with its unique characteristics, complements the others to create harmonious, balanced wines.

As for the reds, the 2025 vintage offered us everything: gourmet, fruity wines for our entry-level and our pure Malbec cuvée Néo, but also full, ripe reds for the sulfite-free Lou Payral cuvée, and especially for our Héritage cuvée, aged in oak barrels.

Exceptional sweet wines

2025 is also, without a doubt, a vintage for sweet wines. The Saussignac harvest took place in four passes (although the first was very low in quantity), and progressively, botrytis developed, giving us excellent concentration with levels above 21°, along with outstanding sanitary quality and no loss at harvest. All of this allows us to craft our high-end cuvée, fermented and aged in barrels: the Cuvée Marie-Jeanne.

A vintage that brings back hope

This 2025 vintage brought us true comfort after two difficult years (2023 and 2024), marked by battles against mildew and yields reduced by drought. Despite still limited yields in 2025, this vintage allows us to dream once again of great wines. Winemaking is still in progress, and nothing is set in stone, but hope has returned.

Vintage 2025: authenticity as the answer

While the wine market is facing challenging times, with increasingly selective consumers in France and around the world, the 2025 vintage embodies, more than ever, a simple answer for us: wines born from respect for nature, crafted with rigor and simplicity, the result of attentive work deeply connected to a terroir we love and cultivate with care.

This vintage, shaped by a contrasting growing season, carries within it the hope of winning back those seeking meaning in their glass. We do not only sell wine—we share a conviction: that an authentic wine, born from responsible viticulture, deserves its place in life’s meaningful moments.

To those who still believe in the value of good craftsmanship and the strength of sincere products, we hope this vintage will convince you that truth is always found in wine: “In vino veritas!”
